We are a fusion of ancient and modern in that old recipes have been updated using modern technology. Tried and tested techniques are augmented with cutting edge distillation and flavour development processes to produce outstanding award-winning spirits.
Our family connection with distilling goes back to (at least) the 1870s when, my great-grandfather and my grandfather were known for their poitín and whiskey making skills. The stories I heard as a child remained with me through to adulthood and were the inspiration behind the setting up of Mourne Dew Distillery. I wanted to reawaken the spirit of those days and also to bring something new to the world of spirits. Accordingly, we created our whiskeys from old mash bills and chose wood policies for optimum maturation of each individual whiskey spirit before finally deciding on a blending for both our Blended Irish and our Single Malt whiskeys.
We also started to develop an expertise in cold distillation and build a knowledge base of how various botanicals and distillates behave when subject to low temperature distillation. This resulted in us building our own pot stills for poitín, gin and vodka distillation. We now distil liquors which contain all the desired flavours from the source botanicals whilst leaving all the unpleasant elements that can be produced by conventional hot distillation behind in the residue.
